It didn't take much for Cal Traversy to get bitten by the "cycling bug."
Back when he was with the Vancouver Police Department—he's now a Sgt. with the DPD—Traversy was a member of the mountain bike detachment.
Always keen on staying fit, Traversy, who is chair of the Tour de Delta, found it a great way to combine his profession and get in a decent work out.
Traversy says he'd often ride his road bike to work, then ride the VPD's mountain bikes for 11 or so hours on shift, then come home.
And when he transferred to the Delta Police Department a few years ago, Traversy brought that love of cycling to the North Delta detachment and would saddle up and take to the streets.
That love for two-wheeling ended up in his name being put forward for the position of chair with the Tour de Delta.
The three-day, three-race event which runs July 6-8 is one best seen first-hand, Traversy says.
"It's one thing to see races like the Tour de France on TV, but you can't beat being there in Delta and getting the whole experience of seeing the riders and hearing the whirring of their tires going by."
Fueling up for that kind of riding can be a challenge. But Traversy has the answer for those wanting to stay away from heavier meals with red meat.
It's his quick chick fajitas which provide plenty of flavour without weighing you down.
Quick chick fajitas
Ingredients
3 fresh chicken breasts (cut into strips)
Salt and pepper to taste
2 Tbsp. extra virgin olive oil
½ red onion
Red, green, yellow, orange peppers
Fresh parsley
1 tsp. fresh garlic, crushed
Taco seasoning
Onion powder to taste
Optional: shredded cheese, sour cream, avocado, salsa
Directions
Add two tablespoons of extra virgin olive oil in a pan with a teaspoon of crushed garlic. Add cut chicken breasts.
Cook on medium to high heat until chicken is thoroughly cooked. Add taco seasoning, onion powder, fresh parsley, and salt and pepper to taste
Stir in cut diced onions and cut peppers.
Cook all ingredients for 10 minutes.
Serve on warm, whole grain tortillas.
You can add shredded cheese, sour cream, avocado and salsa.
